With an estate of more than 80 Managed and Tenanted pubs across the North West, and a growing portfolio of own-brewed beers and lagers, Hydes remains at the forefront of the industry.Pub InformationA Victorian mansion located in Gee Cross, this stunning site extends over 3 acres of land and will open in September 2008. The development of the hall will include the construction of a large conservatory which will help deliver 135 restaurant covers. A host of period features will be retained and there will be extensive gardens. This fantastic site will be capable of hosting weddings and other events of up to 120 guests for formal meals and 200 guests in the existing function facilities.The RoleThe role of a Head Chef is varied, challenging and fun.The current vacancy is within an 80% fresh food operation. As Head Chef you will be responsible for the following areas: - Preparation and cooking of a range of Hydes dishes- People management; developing, motivating and rewarding your staff to ensure that your site maximises its potential- Ordering and stock control; ensuring effective controls are put in place to ensure stock consistency - Menu development with the management team; developing specials, communicating with the management team to ensure great specials are offered day in day out- Health and Safety; knowing exactly how to run your kitchen to ensure the highest professional standards are maintained - Paperwork and accounting; understanding exactly what it is that impacts upon your business and the means through which financial controls and regulations ensure successThe PersonHydes are seeking a passionate, self motivated and team focused individual to bring flair and commitment.With at least 5 years kitchen experience (and at least 2 of these at senior level, in a fresh food environment), you will relish the chance to develop your career, bringing both maturity and drive to this challenging role.Calm under pressure, you will bring excellent people management skills, fantastic cooking ability and be highly organised, able to design and cost out dishes with ease.Bonus/BenefitsIf you feel you’ve got the drive to really make a difference in this role and are excited by the prospect of joining a leading regional brewer and pub retailer the opportunities are endless.ApplyFor more information on this site please see http://www.hydesbrewery.co.uk/html/developments.html
